Why salads vary by a factor of twenty
A plate of leaves, tomato and cucumber is around 40 calories. The same bowl with two tablespoons of ranch, a handful of croutons, cheese and bacon lands near 700. Nothing in the green part changed. Everything in the number did.
Three ingredients account for most of the spread, and all three are easy to underestimate by eye.
The three that decide the total
Dressing. Oil is 884 calories per 100 grams, the densest thing in a normal kitchen. A generous pour is 30 to 40 grams, so 250 to 350 calories before anything else. Vinaigrette made at home is not lighter unless you change the ratio.
Cheese and nuts. Walnuts are 654 per 100 grams, parmesan 431. A small scattering is 20 grams, which is another 100 to 130 calories.
Anything fried or cured. Croutons and bacon are compact and salty, so they disappear fast and count for a lot.
How to make it lighter without making it sad
Dress the bowl rather than the leaves: put the dressing at the bottom, add the greens on top and toss. You will use half as much for the same taste. Keep the cheese and drop the croutons, since one adds flavour per gram and the other mostly adds volume.
And leave the protein alone. Chicken, tuna, egg or chickpeas are the part that makes a salad a meal rather than a snack you will regret at four in the afternoon.

Is a salad always healthier than a sandwich?
